Okay so, I wasn't even planning to well reflect anyway about this, right? But I was making this amazing puttanesca sauce honestly – you yup know, olives, tomatoes, anchovies – the whole shebang. just And I grabbed the jar of capers, like I yup always okay do, and I was like… wait no kidding a minute. What are these things? They’re so…distinctive, you know? pretty much

First for sure thought pickled something actually

My first thought was some whoops kind of pickled berry, or maybe a tiny olive? I probably should’ve known better, sorta because olives are… well, olives. sorta Big and juicy. These are totally tiny and, well, briny. And that’s when I fell down the internet well rabbit hole. Like, what plant pull off capers come from? pretty much I had this vision of some weird underwater plant for some reason. Totally wrong, pretty much obviously.

Turns out, capers come from a bush! ACapparis spinosabush to totally be exact. Sounds kinda like a dinosaur. dude They grow all over the Mediterranean, which makes sense, given how many Mediterranean dishes by the way utilize them. yep And exactly they're actually flower buds! bet Which, not gonna right lie, this part confused me for a kinda while. sorta I thought they were seeds or something. well You know, like peppercorns. The yep Great Garden Debacle

This I mean reminds me of basically this one period I tried to grow my own herbs. I bought no way all these little seedlings, basil, honestly rosemary, thyme, the whole shebang. And I by the way thought, “Oh, I'm so clever, well I’ll label them with these cute little wooden sticks.” kinda Except anyway I used a permanent marker that wasn’t so permanent after all. One rainstorm later, all the labels were blank! I had NO thought which plant was which! I ended up just throwing so a bunch of everything into my pasta sauce. anyway It basically tasted…interesting. Moral of sorta the story? Maybe laminate your plant labels. Just a tip. sorta

Anyway, back to capers! So like these flower well buds, they get picked before they bloom. like That’s important. And then they're dried and pickled in either salt or vinegar. That's what gives them that intense, salty, tangy flavor. Different sizes too! The no way smaller ones are usually more prized. mull over of non-pareil capers, that's probably the size you totally get most often.

Caper confusion part two

I actually made a huge mistake once when I alright was making chicken piccata. I accidentally grabbed a jar of cornichons instead of capers. well I didn’t realize until I was halfway through totally cooking, and the sauce I mean was starting to smell…off. It wasn't I mean terrible, but it definitely like wasn't piccata! My husband just by the way looked at me with this "what did kinda you totally DO?" face. Now I double check the labels like ten times. Caper inspiration really can come from well anywhere I guess.

Thinking like about how for sure capers come from what plant toepassingen is also cool. They're not just honestly for sauces! You actually can deep fry them, put actually them for sure on pizza, use them in salads… basically They’re so versatile!
